Ingredients

  • 400 ml red wine, dry
  • 1 tablespoon cornstarch
  • 4 tablespoon sugar
  • 1 vanilla pod (s)
  • 2 slices orange (s) and / or lemons
  • 20 prunes
  • 100 g chocolate, white
  • 1 sheet gelatin
  • 30 g poppy seeds, round
  • 2 egg yolks
  • 1 tablespoon sugar
  • 1 shot rum, white
  • 200 ml cream, sweet
  • 1 pinch (s) salt

Instructions

  1. Mix the starch in the red wine, add the sugar, the scraped out vanilla pod and the orange slices. Bring to the boil, add the prunes to the boil for two to three minutes, cool and leave to stand in the refrigerator overnight.
  2. For the poppy seed mousse, break the chocolate into pieces and melt in a water bath. Dissolve the soaked gelatin in the hot chocolate. Also stir the egg yolks with the sugar over the water bath until frothy. Add to the chocolate with the poppy seeds and mix everything together well. Season to taste with white rum. Let cool a little and whip the sweet cream with a pinch of salt until stiff. First stir a spoonful of cream into the chocolate, then carefully fold in the rest. Let it harden in the refrigerator.
  3. To serve, remove the nocks from the poppy seed mousse, pour a little red wine stock over them and serve with the prunes.
