Instructions

  1. Peel, core and dice the apples. Heat the butter in a small saucepan, add the apples, sprinkle with the sugar, add the raisins and mix everything well. Pour the apple juice, cover the pot and cook the apple pieces for about 10-15 minutes to form a thick compote. Stir occasionally.
  2. (There can still be apple pieces in the compote!)
  3. Then take it off the stove and let it cool down.
  4. For the cream, stir the mascarpone, honey and yoghurt with a whisk until smooth. Whip the cream until stiff and fold in.
  5. Line a baking dish (approx. 15 x 25 cm) with ladyfingers, spread half of the compote on it and spread about half of the cream on it. Place the remaining ladyfingers on top, cover with the rest of the apple compote (if desired, reserve 1-2 tablespoons for garnish) and spread the rest of the cream on top.
  6. If you like, decorate with a few blobs of apple compote, sprinkle with cinnamon powder or drizzle with honey.
  7. Let it steep in the fridge overnight and take it out of the fridge about 20-30 minutes before serving so that the flavors come out better.
