Ingredients

  • 600 g potato (s), floury boilin
  • 1 medium onion (s)
  • some salt and pepper
  • some butter flakes
  • 1 bunch chives
  • 1 bunch oregano
  • 1 bunch parsley
  • 100 g cheese (Gruyère)
  • 100 g crème fraîche
  • 2 large egg yolks

Instructions

  1. Pre-heat the oven to 220 degrees Celsius. Cover a large baking tray with baking paper and brush with a little oil or clarified butter.
  2. Peel the potatoes and grate the hash browns. Peel and finely chop the onion, mix with the potatoes and season with salt. Shape the potato mixture into 8 small hash browns, place on the prepared tray with a spatula and gently push together. Cover the rösti with butter flakes.
  3. Bake the rösti in the middle of the oven at 220 degrees for about 25 minutes.
  4. In the meantime, cut the chives into rolls. Finely chop the oregano and parsley. Finely grate the cheese. Mix all these ingredients with the crème fraîche and egg yolks and season the mixture with a little salt and plenty of pepper. After baking for 25 minutes, spread the cheese cream over the rösti. Bake them for another 10-12 minutes.
