Ingredients

  • 2 banana (s), ripe
  • 300 ml orange juice
  • 1 tablespoon butter
  • 2 tablespoon sugar, brown
  • 1 tablespoon, leveled cornstarch
  • 20 g raisins
  • 20 g desiccated coconut

Instructions

  1. Halve the bananas lengthways and place in a baking dish.
  2. Put 250 ml orange juice with butter and sugar in a saucepan and bring to the boil for about 1 minute while stirring. Mix the starch with 50 ml orange juice until smooth and add to the mixture in the saucepan while stirring. Stir until the mixture is translucent and thick. Pour over the bananas.
  3. Spread the raisins and coconut flakes over the mixture in the baking dish.
  4. Bake the casserole dish in the oven at 175 degrees (top / bottom heat) for about 25 minutes until the coconut flakes are golden brown.
  5. Portion on plates and serve with cinnamon sugar or a scoop of chocolate or vanilla ice cream.
