Ingredients
- 800 g potato (s), waxy
- 2 heads broccoli
- 2 large pointed peppers, red
- 1 can corn

- 1 ½ pack mozzarella, grated or vegan cheese
- 50 g almond (s), sliced
- some salt and pepper

- some butter or coconut oil
- possibly olive, parsley or other herbs

- Boil the potatoes with their skin on. Wash the broccoli, cut into small florets and do not cook too soft.
- In the meantime, wash, core and cut the peppers into strips. Drain the corn.
- Grease a baking dish with fat and preheat the oven to 200 ° C top / bottom heat or 180 ° C convection.
- Cut the slightly cooled potatoes into slices and place them in the baking dish as the bottom layer. Salt and pepper. Spread the broccoli, drained well, on the potato slices, pour over the peppers and corn.
- Spread the sauce from the recipe Best Vegan Sauce on the vegetables and place the baking dish in the oven. After approx. 5 minutes, remove from the oven and spread the cheese on top, then sprinkle the almonds on top and bake in the oven for approx. 10 minutes until the desired brown color.
- Sprinkle with olive, parsley or other herbs. Also delicious with spaetzle or other noodles.
