  • 1 kg potato (s)
  • Paprika powder
  • 2 tablespoon olive oil
  • curry powder
  • cumin powder
  • Nutmeg
  • 2 leek (s)
  • 1 bunch radishes
  • 6 vine tomato (s)
  • 6 tablespoon oat milk (oat drink)
  • 12 tablespoon oil, neutral in taste
  • 1 teaspoon mustard
  • oregano
  • basil
  • salt and pepper

Instructions

  1. Preheat the oven to 180 degrees circulating air. Peel and dice the potatoes and mix with salt, pepper, paprika and 2 tablespoons of olive oil. Of course, other spices can be added. Bake the potato cubes in the oven for 20-25 minutes.
  2. Wash the leek, cut into rings and stew in a little water for 5 minutes. Cut the radishes and tomatoes into small pieces.
  3. Mix the oat milk with 6 tablespoons of oil and the mustard and salt. Mix the mixture with a hand blender and slowly add the remaining 6 tablespoons of oil until it is creamy. If you want to save yourself this work, just use vegan mayonnaise.
  4. Mix all ingredients and season with oregano, basil, salt and pepper.
  5. The baked potato salad tastes both warm and cold.
