Ingredients

  • 800 g mushrooms, brown
  • 4 tablespoon sugar
  • 5 tablespoon balsamic vinegar
  • 1 small pepper
  • 1 handful basil leaves
  • salt and pepper
  • 3 tablespoon olive oil

Instructions

  1. Clean the mushrooms and, if necessary, quarter or halve. Put dry, ie without fat and without water, in a pan and fry over medium heat for approx. 15-20 minutes, turning more often. Add sugar, melt it and caramelize the mushrooms. Deglaze with balsamic vinegar and let it boil down briefly. Season well with salt and pepper.
  2. Remove the pan from the heat and fold plenty of basil into the mushrooms. Halve the peppers, remove the seeds and add them with the oil.
  3. Let it soak in the refrigerator for a day or two, then remove the peppers.
  4. The mushrooms can also be served on a starter spoon as an amuse gueule.
