Banana Bread with Raisins and Nuts

The aroma of this cake will fill the whole house and warm everyone on cold autumn evenings! Delicious banana bread that you can make if you have bananas at home. Nobody wants to eat them anymore – then it’s time to make this awesome banana cake with raisins and walnuts!

Ingredients

  • Ripe bananas – 3 pcs. (in a purified form – 300 g)
  • Butter 82% – 100 g
  • Eggs C0 – 2 pcs.
  • Flour – 160 g (1 cup 250 ml)
  • Vanilla sugar – 20 g
  • Sugar (optional) – 50 g (to taste)
  • Baking powder – 10 g
  • Salt – 1/3 teaspoon
  • Raisins – 70 g
  • Roasted walnuts – 70 g

Directions

  1. All ingredients should be at room temperature. Peel and mash bananas with a fork.
  2. Add softened butter, vanilla sugar, salt and eggs to the bananas. If desired, you can add regular sugar (I do not add, overripe bananas are very sweet in themselves). Beat with a mixer for 1-2 minutes. Add the sifted flour and baking powder. Beat with a mixer until smooth. If the dough is thin, you can add a little more flour (up to 180 g).
  3. Add raisins and fried walnuts to the dough, mix.
  4. Line a baking dish (I have a 10×22 cm baking dish) with parchment (or grease and sprinkle with flour). Put the dough into a mold, distribute evenly.
  5. Bake banana bread in a preheated oven for 50-60 minutes at 170 degrees. Willingness to check with a wooden skewer or toothpick, it should come out completely dry. Allow the finished cake to cool for 10 minutes in the mold, then you can take it out of the mold.
  6. Banana cake with raisins and nuts turns out to be soft and very, very fragrant. Bon Appetit!
