Banana Coffee Cupcake

Gorgeous coffee cake with bananas for tea. The excellent combination of coffee and bananas gives an extraordinary taste, somewhat reminiscent of creme brulee, and the subtle sourness of the cherry dilutes the sweetness of the cake.

Ingredients

  • 250 ml brewed black coffee
  • 100 ml vegetable oil
  • 140 g sugar
  • 300 g flour
  • 2 peeled bananas (180 g)
  • 100 g cherries or dried apricots
  • 1 teaspoon baking soda + vinegar
  • vanillin

Directions

  1. Mix coffee, vegetable oil, sugar, soda quenched with vinegar, vanillin. Beat everything with a mixer. Add flour, beat well. Add finely chopped bananas.
  2. After whipping everything well, add fresh or frozen cherries (or dried apricots, finely chopped) and stir.
  3. Grease a baking dish, lay out the dough, smooth and bake the banana cake at 180 degrees for about 40 minutes. Willingness is determined by piercing the cake with a wooden skewer – it should remain dry.
  4. Sprinkle the banana cake with powdered sugar before serving.
