Banana Cupcake with Carrots and Raisins Ingredients

  • Banana – 1 pc.
  • Carrots – 90 g
  • Egg – 1 pc.
  • Sunflower oil – 4 tbsp + for greasing the mold (if necessary)
  • Sugar – 4 tbsp
  • Raisins – 30 g
  • Flour – 180 g + for rolling raisins
  • Baking powder – 0.5 teaspoon
  • Baking soda – 0.25 teaspoon
  • Salt – 1 pinch
  • Ground cinnamon – 0.3 teaspoon
  • Ground ginger – 3 pinches
  • Ground nutmeg – 3 pinches

Banana Cupcake with Carrots and Raisins Instructions

  1. Peel the banana. Mash the banana pulp with a fork.
  2. Peel and finely grate the carrots directly into the bowl of mashed banana.
  3. Toss banana puree and grated carrots.
  4. In another bowl, combine egg and sugar.
  5. Whisk or use a mixer to mix the egg and sugar vigorously. Pour in sunflower oil.
  6. Stir the egg and butter mixture well again.
  7. Add the egg mixture to the carrot-banana mass, stir.

  8. Combine flour, salt, baking soda, baking powder, cinnamon, nutmeg, and ginger.
  9. Sift the mixture of dry ingredients into a container with a liquid dough base.
  10. Stir.
  11. Rinse the raisins, dry them, roll them a little in flour and add to the dough.
  12. Stir the raisins and dough.
  13. The best way to bake your cake is to use a round silicone mold with a hole in the middle. If there is no silicone mold, take a metal one, but in this case, be sure to grease the bottom and sides of the mold with oil. If you like, you can grab a muffin tin and bake small muffins. Put the dough into the prepared form.
  14. Bake the raisin and carrot banana muffin in the oven preheated to 180 degrees for about 40 minutes.
  15. Transfer the cooked banana-carrot cake to a wire rack or plate and cool before serving.
  16. If you pour the aromatic carrot and banana cake with cinnamon and ginger icing and garnish with confectionery sprinkles, you will have a festive baked goods!
