Ingredients

  • 265 g flour
  • 50 g cornstarch
  • 2 teaspoons baking soda
  • 2 tablespoon sugar, brown (heaped)
  • 0.5 teaspoon ½ salt
  • 55 g walnuts, chopped
  • 85 g chocolate, dark, chopped
  • 2 banana (s), (ripe)
  • 3 tablespoon oil (sunflower oil)
  • 2 large egg (s)
  • 115 g sour cream

Instructions

  1. Preheat the oven to 180 degrees and line a muffin tin with paper liners.
  2. Chop the chocolate and walnuts. Mix the flour, cornstarch, baking powder, sugar, salt, walnuts and chocolate.
  3. Peel the bananas, mash them well in a plate (it should be a real pulp) and place in a bowl. Add the oil, eggs and sour cream and stir everything briefly. Now briefly stir in the flour mixture so that everything is well connected.
  4. Pour the batter into the prepared muffin pan. It is best to use heaped tablespoons, the dough should reach the top. It also makes exactly 12 pieces.
  5. Then bake the muffins in the preheated oven for about 25 minutes. They should be nice and light brown in color. Take out and let cool on a wire rack.
  6. They also taste very fine when warm.
