A delicious lunch for the whole family – barley with minced meat and vegetables. No one will remain indifferent and everyone will ask for supplements. Simple barley, a simple recipe, and you get an amazingly tasty dish. Few have tried such a yummy! Cook to your health! Tried for you!
Ingredients
Minced meat – 500 g
Pearl barley – 250 g
Sweet pepper – 200 g
Dried (or frozen) tomatoes – 50 g
or fresh tomato – 1 pc.
or tomato paste – to taste
Bulb onions – 2 pcs.
Small carrots – 1 pc.
Garlic – 3 cloves
Parsley to taste
Green onions – to taste
Salt to taste
Ground black pepper – to taste
Vegetable oil – for frying
Directions
I fill the pearl barley with cold water at the rate of 1: 3 and cook until tender, about 30-40 minutes.
I send chopped onion to the heated vegetable oil and fry it until golden.
I add diced carrots to the onion and also lightly fry.
Then I add the minced meat.
Knead it well and fry until tender.
Next, you need the vegetables that you have. I use a substitute for fresh vegetables – frozen vegetables from the freezer. Today I will use sweet peppers (already chopped), dried, and frozen tomatoes. I add vegetables to meat. I add the pepper first, without thawing (it crumbles easily). I stir it.
Cut the dried tomatoes into pieces and add them here. I stir it.
Almost immediately, without defrosting, I add frozen tomatoes. We mix everything. Frozen vegetables cook much faster.
Season with salt, pepper, and you can add boiled pearl barley (drain the water first).
I mix everything well. Barley with minced meat and vegetables is ready.
Before serving, add some finely chopped greens that grow on the window (parsley and green onions). I also add finely chopped garlic. Loose, bright, very fragrant, and tasty pearl barley turned out! Instead of pilaf.
