Ingredients

  • 1 mug mozzarella (mini balls)
  • 1 tablespoon basil
  • 8 cherry tomato (s)
  • 0.25 ¼ bell pepper (s), orange
  • 0.25 ¼ cucumber (s)
  • 1 small onion (s), red
  • 2 cloves garlic)
  • 1 small pepper, medium hot
  • 1 small lemon (organic)
  • 1 tablespoon parsley, finely chopped
  • 1 teaspoon oregano
  • 100 ml olive oil
  • salt and pepper

Instructions

  1. Drain the mozzarella balls well. Wash the tomatoes, remove the stalks and cut the tomatoes in half crosswise. Clean, core and wash the pepper and cut into 1 cm cubes. Wash the cucumber and cut into 8 mm thick slices, then quarter them. Place the small mozzarella balls with the prepared ingredients alternately on 16 wooden skewers.
  2. For the marinade, peel off the red onion and garlic and dice finely. Halve the peppers lengthways. Then remove the stem, seeds and partitions and finely chop the peppers. Wash the lemon with hot water and peel off the zest in strips with a zest zipper. Mix the lemon zest with the onion, garlic, pepperoni, herbs and olive oil in a flat pan.
  3. Lightly salt and pepper the skewers and place in the marinade. Cover and marinate for about 1 hour while turning. Then drain well.
  4. It goes well with fresh baguette or ciabatta.
