Ingredients

  • 600 g jacket potato (s)

  • 4 pairs sausages (Viennese)
  • 3 pickled cucumber (s)
  • 1 tablespoon butter
  • 3 tablespoon oil
  • salt and pepper
  • 1 teaspoon marjoram
  • 4 egg (s)
  • 1 bunch chives

Instructions

  1. Peel the jacket potatoes and cut into cubes.
  2. Peel and dice the onions.
  3. Cut the Viennese sausages into slices.
  4. Cut the pickled cucumbers into chunks.
  5. Heat the butter and oil in a pan over medium-high heat.
  6. Add the potato cubes and fry for 5-7 minutes, stirring occasionally, until golden brown.
  7. Add the diced onions, pickled cucumbers, and sausage slices to the pan and fry together for 10 minutes.
  8. Season the pan contents with salt, pepper, and marjoram.
  9. In a separate pan over medium heat, fry the eggs for 3-4 minutes until cooked through.
  10. Season the fried eggs with salt.
  11. Transfer the sausage and potato mixture to serving plates or a platter, top with the fried eggs, and sprinkle with chopped chives.
