Ingredients

  • Canned red beans (washed) – 3/4 cup
  • Onions (finely chopped) – 1/4 cup
  • Green chili pepper (seeded and finely chopped) – 1 pc.
  • Ground cumin – 1/4 teaspoon
  • Square crackers – 16 pcs.
  • Cheddar cheese (shredded) – 3/4 cup
  • Low-fat milk – 1/2 cup
  • Mayonnaise – 1/3 cup
  • Eggs (slightly beaten) – 2 pcs.
  • Sour cream, parsley, olives, and lime wedges for serving

Instructions

  1. Preheat the oven to 180 °C (356 °F).
  2. In a small bowl, combine the red beans, onions, green chili pepper, and cumin.
  3. In an oven-safe 10×20 cm oiled baking dish, layer 8 crackers, then half the bean mixture, then 8 crackers, then the remaining bean mixture. Sprinkle the shredded cheddar cheese over the top.
  4. In a small bowl, combine the mayonnaise, low-fat milk, and slightly beaten eggs.
  5. Pour the egg mixture over the casserole.
  6. Bake for 20-25 minutes until the top is set.
  7. Serve with sour cream, olives, and lime wedges, garnished with parsley.
