Ingredients

  • 500 g beans, (frozen princess beans)
  • salt and pepper
  • sugar
  • 2 medium onion (s)
  • 200 g cherry tomato (s) (30-35 pieces)
  • 5 tablespoon dressing, (ready-made or homemade - without oil!)
  • 4 tablespoon oil, neutral
  • Feta cheese or mozzarella

Instructions

  1. Cook the beans in boiling salted water for about 10 minutes (rule: it is essential to add at least 1 pinch of sugar so that the beans retain their strong green color even after cooking). Then rinse in cold water and drain. Peel the onions and finely dice them. Halve the cherry tomatoes, at least quarter the normal tomatoes.
  2. Put everything together in a salad bowl, pour the oil-free dressing over it, season with salt and pepper and mix well (rule: do not add any oil yet, as oil binds the dressing and the spices can no longer penetrate the tomatoes and beans).
  3. Stand for about 15 minutes and allow to cool and mix carefully every now and then. Just before serving, sprinkle the oil on top and mix again.
  4. For a little more pep: add feta or mozzarella cubes to the salad.
