Ingredients

  • 500 g minced meat, mixed
  • 1 medium onion (s)
  • 1 bunch herbs, mixed your choice
  • 1 egg (s)
  • 5 tablespoon breadcrumbs
  • 750 g beans, reen
  • 1 large can tomato (s)
  • 1 liter vegetable stock
  • 250 g brown rice and / or wild rice
  • Sambal Oelek
  • salt and pepper
  • Paprika powder, hot as rose
  • cumin
  • possibly sheep cheese
  • possibly natural yoghurt

Instructions

  1. Chop the onion very finely. Mix with the mince, egg, breadcrumbs, herbs, salt and pepper and make a minced meat batter. Shape the dough into small balls. Wash the beans and snip off the ends. Roughly cut the tomatoes into cubes.
  2. Heat some olive oil in a large saucepan and sauté the rice. Add the beans and toss everything briefly. Deglaze with the tomatoes and approx. 500 ml of stock. Carefully add the meatballs.
  3. Let everything simmer on a low flame for about 30 minutes, until the rice is firm to the bite. Depending on the type of rice, add the stock while it is simmering so that the rice is always covered. Finally season with sambal oelek, salt, pepper and the remaining spices and serve.
  4. We like to spice things up and serve natural yoghurt with it, so that everyone can soften something as they wish. It also tastes delicious if you crumble some sheep`s cheese on top of the finished dish.
