Beef Azu (with Lightly Salted Cucumbers and Potatoes)

A traditional Tatar dish – beef azu with lightly salted cucumbers and potatoes – has a light spicy taste and aroma. The dish is prepared most often in summer when there are pickles in the fridge. We fry, simmer – and bon appetit!

Ingredients

  • Beef (pulp) – 500 g
  • Bulb onions – 2 pcs. (170 g)
  • Lightly salted cucumbers (pickled, salted) – 2 pcs. (200 g)
  • Potatoes – 3 pcs. (350 g)
  • Tomato paste – 3 tbsp
  • Flour – 1 tbsp
  • Salt – 0.5 teaspoon
  • Ground pepper (pepper mixture) – 1 pinch
  • Garlic – 2 cloves
  • Vegetable oil – 5-6 tbsp
  • Drinking water – 150 ml
  • Fresh parsley – 1-2 branches

Directions

  1. Prepare all ingredients. Peel the onion and garlic.
    It is better to use beef without streaks and films or to clean them before cooking. Choose a high-quality, slightly sweet tomato paste. If the paste is sour, you will also need 0.5-1 teaspoon (to taste) of sugar. The dish can also be cooked with pickled/pickled cucumbers, but then you need a little less salt.
  2. Cut the meat into cubes about 4-5 cm long.
  3. Heat 2 tablespoon in a skillet. tablespoons of vegetable oil and fry the beef.
  4. When the liquid has evaporated and the meat is lightly browned, add salt, black pepper, and wheat flour to the pan. Stir and cook for another 30-60 seconds, stirring occasionally.
  5. Pour 150 ml of water over the meat, boil, cover with a lid. Simmer the beef over low heat for 30 minutes.
  6. Cut onions and lightly salted cucumbers into cubes.on another skillet, heat 1-2 tablespoon. tablespoons of vegetable oil and fry the onion on it until transparent.
  7. Add the chopped cucumbers to the onion and fry together for another 5 minutes.
  8. Dissolve the tomato paste with 150 ml of water.
  9. Pour the tomato sauce into the skillet with the onions and cucumbers.
  10. Simmer the sauce with vegetables for 5-7 minutes.
  11. Meanwhile, the beef became soft and the sauce thickened.
  12. Add the tomato sauce with vegetables to the beef pan, stir and simmer for another 15 minutes.
  13. Peel the potatoes and cut into slices.
  14. Fry the potatoes in a skillet with 2 tablespoon. tablespoons of vegetable oil until browning, 8-10 minutes.
  15. Add fried potato slices to the skillet with meat and vegetables. Stir gently and simmer for another 5 minutes.
  16. Add minced garlic (for example, passed through a press) to the pan, turn off the heat and stir the dish again.
  17. Beef azu with lightly salted cucumbers and potatoes is ready.
  18. Serve the basics with rice or boiled potatoes and garnish with fresh parsley. This is delicious!
