Beef Stroganoff (From Beef)

Beef stroganoff is a famous dish of Russian cuisine. Soft, tender beef with delicious gravy. Beef Stroganoff goes best with mashed potatoes. Real delicious and nutritious homemade food!

Ingredients

  • Beef (I have a neck part) – 500 g
  • Bulb onions – 1 pc.
  • Garlic – 1 clove
  • Sour cream 20% – 100 g
  • Ketchup – 2-3 tbsp
  • (can be replaced with tomato paste – 0.5 tablespoons)
  • Water – 100 ml (adjust the thickness of the gravy to your liking)
  • Flour – 1 tbsp
  • Butter – 10-20 g
  • Vegetable oil – for fryingFry the beef until golden brown in 2-3 sets in a well-heated frying pan with vegetable oil, over a sufficiently high heat. There is no need to fry the meat until tender, you just need to brown it. Remove the meat from the pan, leaving the fat in it, and fry the second batch.
  • Bay leaf – 1 pc.
  • Salt – 0.5 teaspoon (to taste)
  • Ground black pepper – to taste

Directions

  1. Cut the beef into strips or pieces as you like. Soak the meat so that there is no excess moisture on it. Season with salt and pepper.
  2. Sprinkle with flour and mix well so that the flour covers all the pieces of meat.
  3. Cut the onion into feathers or half rings.Add ketchup (or tomato paste).
  4. Crush the garlic and chop finely.
  5. Fry the beef until golden brown in 2-3 sets in a well-heated frying pan with vegetable oil, over a sufficiently high heat. There is no need to fry the meat until tender, you just need to brown it. Remove the meat from the pan, leaving the fat in it, and fry the second batch.
  6. In a frying pan, fry the onions until golden and soft. Add butter.
  7. Place the meat in a skillet with sauteed onions.
  8. Add ketchup (or tomato paste).
  9. Add sour cream and garlic.
  10. Pour in water, add bay leaf. Stir well, cover and simmer over low heat until the desired tenderness of the meat, at least 20-30 minutes (60 minutes is possible, then you may need to add water).
  11. Serve beef stroganoff with mashed potatoes.
