Beef stroganoff is a classic beef dish. This is a variant of the dish without preliminary beating meat and without tomato paste, but with the addition of cream and sour cream. Fried chanterelles and sun-dried tomatoes will be an interesting addition to the dish. Well, green onions are a welcome addition to both meat and buckwheat.

Ingredients
Buckwheat groats – 60 g
Beef – 160 g
Mushrooms (chanterelles) – 50 g
Onions – 50 g
Sunflower oil – 50 ml
Cream (15% fat) – 10 ml
Water – 100 ml
Sour cream – 20 ml
Salt – 0.75 tbsp (or to taste)
Butter – 25 g
For the filling (optional):
Green onions – 10 g (or to taste)
Sun-dried tomatoes – 25 g
Directions
Let’s prepare the ingredients. In fact, we are preparing two dishes: boiled buckwheat (as a side dish) and beef stroganoff with mushrooms.
Let’s start with buckwheat. Rinse the groats by changing the water several times. Fill the buckwheat with water, twice the volume of cereals (1.5-2 cups). Add about 0.75 teaspoons of salt, or to taste. Bring to a boil, reduce the fire. Cover the pot with a lid. We will boil the cereals for 15-20 minutes until the buckwheat swells and absorbs water.
Wash the beef, dry it with paper towels. Cut the meat into thin cubes.
Peel the onion, rinse and cut into quarters.
Put the onion in a frying pan, add half the oil (25 ml).
Fry the onion for 7 minutes, stirring occasionally.
Heat the second half of the oil in another pan. Lay out the beef, fry until golden brown.
Combine onion and beef. Add water and salt (0.5 teaspoon or to taste). We will simmer until soft – about half an hour.
Next, add cream and sour cream to the meat.
Stir and simmer over low heat until the liquid part boils down to a sauce.
Fry the chanterelles in butter for 15 minutes. Salt the mushrooms (0.5 teaspoons of salt or to taste). Put beef stroganoff in the center of the dish, buckwheat around. Put the mushrooms on the buckwheat, sprinkle everything with green onions and add a few slices of sun-dried tomatoes.
During this time, buckwheat is already cooked.
Wash the green onions and chop finely.
