Ingredients
- 500 g beetroot, cooked
- 150 g feta cheese
- 1 bunch spring onion (s)
- 50 g pine nuts
- 3 tablespoon apple cider vinegar
- 4 tablespoon olive oil
- 0.5 teaspoon ½ sea salt
- some pepper, freshly ground

- Roast the pine nuts in a pan until golden brown and set aside.
- Cut the beetroot into small cubes. Wash the spring onions and cut into rings. Crumble the feta. Mix the beetroot, feta, pine nuts and spring onions in a large salad bowl, mix with salt, pepper, vinegar and oil and leave to stand for at least 30 minutes. If necessary, season again.
