Ingredients

  • 500 g beetroot, cooked
  • 150 g feta cheese
  • 1 bunch spring onion (s)
  • 50 g pine nuts
  • 3 tablespoon apple cider vinegar
  • 4 tablespoon olive oil
  • 0.5 teaspoon ½ sea salt
  • some pepper, freshly ground

Instructions

  1. Roast the pine nuts in a pan until golden brown and set aside.
  2. Cut the beetroot into small cubes. Wash the spring onions and cut into rings. Crumble the feta. Mix the beetroot, feta, pine nuts and spring onions in a large salad bowl, mix with salt, pepper, vinegar and oil and leave to stand for at least 30 minutes. If necessary, season again.
