Beetroot Smoothie with Kefir and Herbs

Ingredients

  • Beets (small) – 1 pc. (about 150 g)
  • Kefir – 400 ml
  • Fresh dill – a few branches
  • Green onion – 3-4 feathers
  • Salt – 1 pinch
  • Ground black pepper – 1 pinch

Directions

  1. Pre-boil the beets in water without salt until tender (about 40-50 minutes). Then remove the boiled beets from the broth and cool. Peel the cooled beets and cut them into cubes. Transfer the beetroot cubes to a blender bowl.
  2. Rinse green onions and dill, dry, chop coarsely, and add to the beets. Pour in half of the entire volume of kefir. Pour salt and black pepper into a pinch. Now whisk the combined ingredients at high speed.
  3. Pour the remaining kefir into the resulting mixture. Whisk again until smooth.
  4. Pour the finished smoothie into glasses. Serve the beetroot smoothie with kefir and herbs immediately after cooking.
