Ingredients

  • 800 g red pepper (s)
  • 2 medium onion (s)
  • 2 cloves garlic
  • 2 tablespoon olive oil
  • 800 ml vegetable stock
  • 3 teaspoons paprika powder, sort to taste
  • 0.5 teaspoon ½ spice mixture (rice seasoning)
  • 1 pinch (s) cayenne pepper
  • salt
  • 2 large pancakes
  • some sour cream or creme fraiche

Instructions

  1. Wash and chop the peppers, cut into small strips. Dice the onions and garlic. Cut the pancakes into small slices.
  2. Sauté the onions and garlic in olive oil, add the pepper strips and sauté. Top up with vegetable stock. Add the spices. Cook for 5-7 minutes. Maybe puree the soup a little, but it doesn`t have to be. Finally add the pancake slices. Serve with a dollop of sour cream or place on the table so that everyone can portion themselves.

  4. The pancake can be sweet or salty. Both taste good.
  5. The rice seasoning can be replaced by another, preferred seasoning mixture.
  6. If you like the soup thicker, you can tie it with mashed potatoes.
