Ingredients

  • 400 g black beans
  • 3 tablespoon oil
  • 3 cloves garlic, pressed
  • 1 large onion (s), diced
  • 1 tomato (s), diced
  • 1 carrot (s), diced
  • 350 g bacon, diced
  • salt
  • pepper
  • 1 sprig parsley

Instructions

  1. Soak the beans for about 12 hours. Cook in a pressure cooker with 1.5 liters of water for about 45 minutes. Then switch off and let stand. Heat oil in a pan. Add onions, garlic, tomatoes and carrots and fry for 5 minutes. Also add the bacon and continue frying. Stir everything into the beans and let simmer for another 10 minutes. Season with salt and pepper, chop parsley and add.
  2. Serve the black beans with rice. If you want, you can also serve boiled bananas (plantains), which are typical of the country.
