Ingredients

  • 600 g blackberries, washed and cleaned
  • Apple juice (organic), naturally cloudy
  • 1 sprig rosemary, small
  • 1 packet preserving sugar (2: )
  • 1 sheet gelatin, white
  • 2 packs vanilla sugar (bourbon vanilla sugar)

Instructions

  1. Fill the blackberries with apple juice to 1 kg and cook until soft. Mash with a potato masher. Soak the gelatine in cold water.
  2. Add the preserving sugar and vanilla sugar to the blackberries, stir briefly, add the small sprig of rosemary and bring to the boil. Take the branch out again, otherwise the taste will be too intense.
  3. Add the gelatin squeezed out. Let the whole thing boil for 4 minutes while stirring and pour immediately into jars rinsed with hot water and close tightly. Turn the glasses upside down and let them cool down.
