Blackberry Cobbler

Cobbler recipe with blackberry, lemon zest and milk. The original berry dessert will be an excellent breakfast dish. Serve well with vanilla ice cream.

Ingredients

  • Sugar – 4 Tbsp. spoons
  • Lemon juice – 1 Tbsp. the spoon
  • Lemon, zest – 1/2 Piece
  • Wheat flour – 2 Glasses
  • Salt – 1/4 Teaspoon
  • Baking powder – 1
  • Vegetable Fat – 1/4 Cup
  • Butter – 4 Tbsp. spoons
  • Egg – 1 Piece

Directions

  1. Grate the zest of half a lemon. Preheat oven to 220 degrees. Combine the blackberries, ½ cup sugar, lemon juice and lemon zest in a bowl. Stir gently and then place in a greased baking dish.
  2. In a separate bowl, mix together wheat flour, salt, baking powder and 1 tablespoon of sugar. Add vegetable fat and butter, stir with a dough hook or fingers until crumbs are consistency.
  3. Combine milk and egg in a separate bowl. Pour the mixture into the flour mass, stir. The mixture should be smooth and moist.
  4. Place the cooked dough on top of the blackberries, forming small pieces with your fingers. 5.
  5. Sprinkle with 2-3 tablespoons of sugar on top and bake in a preheated oven until golden brown for 30 minutes. Allow dessert to cool to room temperature and serve with vanilla ice cream.
