Ingredients

  • 300 g berries (blueberries)
  • 100 ml honey (or more if needed)
  • 1 half a lemon (s), the juice it
  • 5 mint leaves
  • 350 ml whipped cream
  • 250 ml yogurt, Greek, thicker
  • 4 teaspoon pistachios, finely chopped

Instructions

  1. Clean and wash the blueberries and puree with honey, lemon juice and mint leaves. Press the mixture through a sieve and thus separate the seeds and skin from the pureed, then throw away the remains in the sieve. Test the pressed mixture and if necessary sweeten with honey. Place in a bowl, cover with plastic wrap and let cool in the refrigerator for approx. 10 minutes.
  2. Whip the cream until stiff and mix with the yoghurt. Carefully mix the blueberry puree into the yogurt. Pour into four glasses and cool.
  3. Garnish with pistachios and a few blueberries if necessary before serving.
