Blueberry Muffins

How are muffins different from cupcakes? It is said that muffins should be drier than muffins. Or like this: cupcakes can be big, but muffins are always small. The muffins are not glazed or powdered. But it doesn’t matter what the name of this wonderful pastry is. Tasty is the main thing. It is best to eat muffins freshly baked, warm (and they won’t stay for a long time). Try raspberries instead of blueberries, and orange peels instead of lemon peels.

Ingredients

  • Butter, melted and slightly chilled – 3 ½ tbsp
  • Self-rising flour (with baking powder) – 2 ¼ cups
  • Baking powder – 1 teaspoon.
  • Sugar – 6 tbsp
  • Zest of 1 lemon, finely grated (optional)
  • Salt
  • Natural yogurt – 1 glass
  • Eggs are large, slightly beaten – 2 pcs.
  • Blueberries – 1 ½ cups

Instructions

  1. Preheat oven to 200 degrees. Sift flour and baking powder into a bowl, add sugar, lemon zest and a pinch of salt. Make a groove in the center.
  2. Combine yogurt, eggs and butter. Pour this mixture into dry ingredients. Add blueberries and stir gently. Stir the dough briefly (don’t worry if lumps remain) or the muffins will be “heavy”.
  3. Divide the dough into 12 tins (regular with paper) and bake for 20 minutes until golden brown. Cool in the tins for 5 minutes. Serve warm or at room temperature. Enjoy your tea!
