Braised Chicory

Instructions

  1. Rinse the chicory for about 1 minute and remove any wilted outer leaves. Using a sharp knife, cut out the bitter stalk in a cone shape. Place the chicory heads side by side in a shallow pot and add water until the pot is almost halfway full. Lightly salt the water, spread half the butter over the chicory, cover the pot, and simmer over low heat for approximately 20 minutes until very soft.
  2. Remove the lid and increase the heat to medium-high. Let the cooking liquid evaporate completely, then add the remaining butter. Brown the chicory heads on all sides over medium-high heat.

About Editorial Staff

The Boss Kitchen editorial staff oversees content review, fact-checking, and recipe verification across the site. Published articles pass through the editorial team before going live, ensuring ingredient lists, techniques, cooking times, and nutritional claims hold up in a home kitchen. The team coordinates contributions across the site writers, handles reader corrections, and maintains consistency in measurement conventions, safety guidance, and dietary labeling. Posts under this byline typically represent team-reviewed reference material, site announcements, or editorial roundups rather than individual-author features, and they are held to the same sourcing standards as bylined recipe and product coverage.
