Ingredients

  • 8 slices white bread (from the day before)
  • 1 bunch spring onion (s)
  • 200 g sheep cheese
  • 0.5 ½ cucumber (s)
  • 3 large tomato (s)
  • 2 cloves garlic
  • 1 bunch parsley
  • 1 bunch basil
  • 1 tablespoon balsamic vinegar
  • 6 tablespoon olive oil
  • 1 ½ tablespoon mustard, medium hot
  • 1 teaspoon sugar
  • salt and pepper

Instructions

  1. Dice the bread, clean the spring onions and cut into fine rings. Dice the sheep`s cheese, wash, peel and finely dice the cucumber. Wash the tomatoes, cut out the stalks, core the pulp and dice finely. Peel the garlic and dice very finely. Wash the parsley and basil, coarsely chop the leaves.
  2. For the marinade, stir together the vinegar, oil, mustard, sugar, salt and pepper until you have a smooth sauce. Put the bread in a large bowl and pour the sauce over it. Let it steep for 15 minutes.
  3. Then add all the other ingredients, mix everything.
