Ingredients

  • 200 g spelled flour type 1050

  • 100 g sour cream or crème fraîche

Instructions

  1. For the tarte flambée dough, knead the flour, salt, oil and water with the mixer to form a smooth dough until it no longer sticks. If necessary, add a little more flour. Then let the dough rest for about 30 minutes.
  2. For the sauce, season the sour cream with a little salt and pepper and coat the rolled out tarte flambée dough with it.
  3. As a topping, cut the Gorgonzola into small pieces and spread it finely on the tarte flambée. Then top the tarte flambée with the onions cut into strips, the ham slices and the fig slices.
  4. Bake at approx. 220 ° C top / bottom heat for approx. 15 minutes on the lowest rack of the preheated oven. The tarte flambée is also very good on a pizza stone.
  5. Sprinkle with the coarsely chopped parsley before serving.
