Ingredients

  • 500 g potato (s)
  • 1 onion (s)
  • 2 tablespoon olive oil
  • 1 green pepper (s)
  • 1 handful tomato (s), dried in oil
  • 2 large pickles
  • 50 g cheese (Edam), diced
  • 2 egg (s)
  • some parsley, chopped
  • some salt and pepper, to taste

Instructions

  1. Peel the potatoes and cut into thin sticks, about half as thick as for french fries. Peel the onion and cut into half rings. Wash and clean the peppers and cut into small cubes. Dice the dried tomatoes and pickles. Heat the oil in a non-stick pan and fry the potatoes in it for about 10 minutes until they are lightly browned. Add the onions and pepper pieces and continue frying until the potatoes are tender. This takes about 15 minutes in total. Reduce the heat now. Stir in the tomatoes and cucumbers, season with salt and pepper to taste, then sprinkle the cheese on top - do not stir anymore. Beat the eggs over it and put a lid on the pan. When the egg white is set (4-5 minutes), remove the pan from the heat and sprinkle the farmer`s breakfast with parsley.
