Ingredients

  • 1 large broccoli
  • 100 g cocktail tomatoes
  • 10 tomato (s), half-dried, in oil
  • 100 g feta cheese your choice
  • 2 handfuls baby spinach, fresh
  • 1 handful fresh basil
  • 6 tablespoon olive oil
  • 2 tablespoon balsamic vinegar, darker
  • some salt and pepper, black, ground

Instructions

  1. Cut the broccoli into small florets and cook in the steamer for 5 minutes until al dente, then leave to cool.
  2. Drain the half-dried tomatoes and cut into small pieces like the fresh cocktail tomatoes. Crumble the feta cheese with your hands. Cut the spinach and basil leaves into strips.
  3. Put all ingredients in a large salad bowl. Add olive oil and balsamic vinegar and season with salt and pepper.
  4. This fits e.g., my quick garlic pizza bread, found in my other recipes.
