Ingredients

  • 500 g pasta
  • Salt water
  • 1 head broccoli
  • 1 handful parmesan, freshly grated
  • 1 clove garlic
  • 1 pinch (s) chilli flakes
  • 1 piece (s) butter
  • salt and pepper

Instructions

  1. Put the salt water in a large saucepan. Cut the broccoli florets from the stalk. Cut off the woody end of the stalk with a sharp knife and peel it. Then cut the stalk into small cubes.
  2. When the water is boiling, add the pasta and, after a minute of cooking, add the broccoli florets. When the pasta is al dente, skim off a large cup of the cooking water and set it aside for later. Drain the pasta with the broccoli.
  3. Now fry the broccoli cubes, the garlic and the chilli flakes briefly in a large frying pan with a little olive oil. Then add the pasta and broccoli to the pan, sprinkle with the parmesan and butter.
  4. Now deglaze the pasta with the cooking water and carefully stir in everything until a creamy sauce is formed. Season with salt and pepper and serve hot.
