  • 2 ½ tablespoon butter
  • 1.8 liters broth
  • 400 g salmon, smoked
  • 200 g crème fraîche
  • salt and pepper
  • nutmeg

Instructions

  1. Peel and dice the onion. Clean and wash broccoli and cut into florets. Cut the stems into small pieces. Heat the butter in a saucepan, sauté the onion cubes, deglaze with the stock and bring to the boil. Cook the broccoli in it for 10 minutes. After approx. 5 minutes, remove a few florets, rinse under cold water and set aside. Cut salmon into strips. Puree the broccoli in the soup. Stir in the creme fraîche and bring to the boil briefly. Season the soup to taste. Serve with broccoli florets and salmon.
