Ingredients

  • 400 g roast beef, sliced
  • 2 large onions, red
  • 500 g broccoli
  • 15 g iner root
  • 2 handfuls peanuts, unsalted
  • 2 cloves garlic
  • 250 ml vegetable stock
  • 3 tablespoon sauce (teriyaki)
  • 4 tablespoon soy sauce
  • 1 orange (s), organic
  • 150 g noodles (wok)
  • some Sambal Oelek

Instructions

  1. Mix the sliced beef with the teriyaki sauce in a bowl and let it steep.
  2. Remove the florets from the broccoli and wash, peel the stem and cut into small cubes. With a vegetable peeler or a zest peeler, peel the orange peel in thin strips and cut into small pieces. Squeeze the peeled orange. Cut the onions into strips and finely chop the garlic. Peel and chop the ginger. Crush the peanuts in a mortar.
  3. Heat some oil in the wok and fry the meat on high heat for about 2 minutes, remove.
  4. Put some oil back into the wok and add the broccoli, onions, garlic, ginger and the orange peel. Fry on high heat for about 4 minutes, then add the vegetable stock, soy sauce and orange juice. Bring to a boil and simmer briefly on medium heat. Add the wok noodles and simmer until they are firm to the bite.
  5. Now add the meat and heat it up.
  6. Distribute on the plates and pour the chopped peanuts and, if you like, a dollop of sambal oelek on top.
