Ingredients

  • 1 small Broccoli head, roughly cut
  • 1 zucchini, diced
  • 1 onion (s), diced
  • 1 clove garlic, diced
  • 50 g bacon, mixed, or bacon, diced
  • 1 small Bunch parsley, smooth
  • 1 shot white wine
  • 1 liter vegetable broth, or meat broth
  • 1 cup whipped cream
  • 1 teaspoon butter
  • 1 tablespoon olive oil

Instructions

  1. In a saucepan, sauté the bacon, onions and garlic in the olive oil and butter until the onion is translucent. Now add the broccoli (with the stalk), the zucchini and a small portion of the parsley, roughly chopped, and fry a little. Deglaze the vegetables with the white wine and after a short time pour in the broth. Simmer for 25 minutes on medium heat. Then season the soup with salt, pepper and nutmeg and puree it finely. Anyone who attaches particular importance to a very fine soup can now also pass it.
  2. Stir in the whipped cream and garnish the soup with finely chopped parsley.
