Tried a new baking recipe to test one idea! Soda – we use it unexpectedly! The buns turned out to have a fried, appetizing and very thin crust. The best crust in baked goods!
Like almost all baked goods, we will start making buns by kneading the dough. The water should be warm (about 36 degrees). The butter should be soft.
Pre-activate the yeast, i.e. make a quick dough. We send sugar, yeast and a couple of tablespoons of flour to warm water. Stir and let the dough stand for 5 minutes.
Mix the flour with salt. Add baking powder – it will improve the structure of the dough and remove the smell of yeast in the finished product. We mix. Pour the dough into the flour mixture.
We knead the dough with our hands. Add the butter at the end of the batch, when the dough gathers into a lump. Knead the dough for a few more minutes, until smooth.
Transfer the dough to a bowl and cover with a lid or plastic wrap.
Let the dough rise (rise) in a warm place, in time – about an hour.
Divide the finished dough into 20 equal parts, make koloboks.
We form each of these blanks-koloboks in the form of a small carrot.
Cover the baking sheet with parchment. Immediately on a baking sheet, combine the carrot blanks in pairs, forming heart buns. The dough is slightly sticky, so the dough pieces fit together perfectly. Cover the buns with foil and leave for 15-20 minutes to rise. We turn on the oven to heat up to 200 degrees.
And now the most important thing: prepare a soda solution. To do this, bring the water to a boil. Add soda to the water and mix well.
Gently grease each bun 2-3 times with a soda solution using a silicone brush.
Sprinkle some of the buns with sesame seeds on top, and some with coarse sea salt.
We bake yeast buns in a preheated oven for 15-20 minutes (watch the crust).
The result is very tasty and beautiful buns with a golden crust.
