Ingredients
Butter – 230 Grams
Cocoa – 3/4 Cup
Olive oil – 1/4 Cup
Sugar – 1 1/4 Cups (1 cup brownie, 1/4 cup cream)
Eggs – 4 Pieces
Vanilla Sugar – 2 Teaspoons (1 teaspoon in brownie, 1 teaspoon in cream)
Flour – 1.5 Cups
Coffee – 1/4 Cup
Liqueur – 2 Art. spoons (optional)
Savoyardi cookies – 150 Grams
Mascarpone – 450 Grams
Proteins – 4 Pieces
Directions
For the cream, beat the whites and sugar until fluffy, add mascarpone and vanilla sugar. Stir until a smooth creamy consistency. Leave it aside.
Preheat the oven to 175 degrees. Melt butter, add olive, cocoa.
Add sugar, vanilla sugar and eggs. Whisk a little. Sift flour into the mixture. Stir with a spatula.
Lubricate the mold (about 26x26x6cm) with oil. Spoon out half of the dough. Spread out the savoyards. Sell coffee and liquor.
Place the cream on top of the cookies.
Top with the remaining dough. You can make “marble” stains with a fork.
Place in the oven for 45-50 minutes. Cool it down. If you want to cut evenly, put the dessert in the refrigerator for a couple of hours.
