Bruschetta with Strawberries and Sweet Tomatoes

Italian bruschetta is the perfect treat for any occasion, be it a friendly get-together or a more formal occasion. The vibrant flavors of Mediterranean cuisine are blended in this crunchy slice of bread topped with a juicy salad. For the salad, mix finely chopped grape tomatoes and strawberries with olive oil, aromatic basil, and balsamic vinegar, which will emphasize the sweet taste of tomatoes and berries, adding light astringency. Bruschetta is served immediately after picking to prevent the toasted bread from getting soaked.

Ingredients

  • 1 baguette, cut diagonally into 1 cm slices
  • 1 tablespoon. ripe strawberries, diced
  • 1 tablespoon. grape tomatoes, diced
  • 1 small clove of garlic, minced (optional)
  • 3 tbsp thinly sliced fresh basil
  • 2 tbsp extra virgin olive oil + extra to grease the bread
  • 2 teaspoon balsamic vinegar

Directions

  1. In a medium bowl, combine strawberries, tomatoes, garlic, basil, olive oil, balsamic vinegar, 0.5 teaspoon. salt and 1/4 teaspoon. black pepper. Set aside for 30 minutes and stir from time to time.
  2. Preheat a grill or grill pan over medium-high heat. Spread the bread on a baking sheet and brush with olive oil. Transfer to a grill and brown the slices until golden brown, 2-3 minutes on each side. Place on a platter.
  3. Top the warm toasted slices of bread with a generous helping of strawberry tomato salad. Serve immediately.
