Bruschetta with Zucchini and Cheese

Bruschetta with zucchini and cheese – a detailed recipe.

Cook: 17 minutes

Ingredients

  • Baguette, cut into thin slices
  • Olive oil
  • Salt
  • freshly ground pepper
  • 1 zucchini
  • Juice of 1 lemon
  • Garlic cloves, peeled and cut in half
  • ricotta or mozzarella

Directions

  1. Place the baguette slices on a baking sheet. Brush with olive oil, sprinkle with salt. Bake in an oven preheated to 220 ° C until golden brown, for about 7 minutes. Remove slices of bread from the oven and cool slightly.
  2. Using a peeler, cut the zucchini into long thin strips. Stir in lemon juice, olive oil, and a large pinch of salt.
  3. Grate the warm slices of bread with the garlic cloves. Top with zucchini, cheese and sprinkle with freshly ground pepper. Drizzle with vegetable juice.
