Buckwheat Casserole with Cottage Cheese, Apples, Dried Fruits and Walnuts

If you are bored with your usual cereals, prepare a buckwheat casserole. This casserole turns out to be not only tasty but also healthy. Buckwheat porridge is supplemented with cottage cheese, apples, and dried fruits, which are poured with a sour cream-egg mixture. It turns out incredibly tasty. Try to cook!

Ingredients
Buckwheat groats – 150 g
Cottage cheese (5% fat) – 150 g
Sour cream – 150 g
Large apple – 1 pc. (140 g)
Eggs – 2 pcs.
Sugar – 60 g
Walnuts – 30 g
Raisins – 30 g
Dried apricots – 6 pcs.
Butter – 20 g + for greasing the mold
Vanillin – 1 pinch
Directions
First of all, cook buckwheat porridge. To do this, rinse the buckwheat thoroughly, fill it with water in a 1: 2 ratio and cook over medium heat for 10-13 minutes. Then cool the buckwheat a little.
Grate the apple on a coarse grater and place in a deep bowl. Add cottage cheese to the bowl to the grated apple.
Drain the dried apricots and raisins. Pat dry fruit dry on a paper towel. Finely chop dried apricots. Chop the walnuts with a knife. Add raisins, dried apricots, and walnuts to a bowl. Turn on the oven to heat up to 180 degrees. Stir the ingredients in a bowl.
Prepare the sour cream and egg filling. To do this, combine eggs, sugar, and sour cream in a separate bowl, add a pinch of vanillin. Use a whisk or fork to loosen the eggs with sugar and sour cream until smooth.
Put the cooled buckwheat porridge in a bowl with cottage cheese and apples. Pour the sour cream sauce into a bowl of buckwheat and stir the mixture.
A baking dish (I have a square ceramic dish with a side of 20 cm.) Grease a piece of butter. Put the buckwheat mass in a mold and compact a little with a spoon.
Cut the butter into small pieces and put it on top of the buckwheat mass. Place the dish in the preheated oven on a medium level.
Bake for 30-35 minutes, until golden brown. In any case, be guided by the characteristics of your oven.
Cool the buckwheat casserole a little, and only then cut into portions. Delicious buckwheat and cottage cheese casserole with apples, no doubt, will please everyone who tries it. Healthy and tasty.
