Ingredients

  • 1 head cauliflower
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon garlic granules
  • 1 teaspoon onion granules
  • 1 teaspoon paprika powder
  • 1 teaspoon cumin
  • 250 ml milk or soy milk
  • 1 tablespoon white wine vinegar or lemon juice
  • some salt and pepper

For the sauce:

  • 2 tablespoon honey or agave syrup
  • 0.33 cup sriracha sauce
  • 3 tablespoon oil, neutral

Instructions

  1. Make buttermilk by mixing milk with vinegar or lemon juice and setting aside for a moment.
  2. Preheat the oven to 225 ° C top and bottom heat. Line a baking sheet with parchment paper. Chop the cauliflower into 3 - 5 cm pieces.
  3. In a large bowl, mix 1 small coffee cup of flour with baking soda, granules and spices. Add the buttermilk and mix well until there are no more lumps. Add the cauliflower to the bowl and stir well until all of the bites are covered in the mixture. Place on the baking paper, but make sure that there is enough space between the florets. Place in the oven for 20-25 minutes until they are golden-brown, turn halfway through.
  4. In the meantime, prepare the marinade. Mix the honey or agave syrup with the hot Sriracha sauce and oil.
  5. Take the cauliflower out of the oven and place in the bowl with the marinade and stir, then put in the oven for another 15-20 minutes.
