Ingredients

  • 250 g bulur, finer
  • water, boiling
  • some bulgur to refine
  • 2 tablespoon tomato paste
  • 2 tablespoon paprika pulp, mild
  • 0.5 ½ bunch spring onion (s)
  • 0.5 ½ bunch parsley, smooth
  • 2 pointed peppers, red
  • 1 small cucumber (s), Turkish
  • 1 cup oil (small cup)
  • salt
  • chili

Instructions

  1. Put the bulgur in a bowl and fill it up with enough hot water (kettle) so that it is approx. 1 cm above the bulgur. Then let it swell.
  2. In the meantime, peel and core the cucumber, paprika and spring onions (also the cucumber because of the water) and cut into small cubes, the spring onions into thin rings. Clean the parsley and cut into small pieces.
  3. Mix the slightly warm bulgur with tomato paste, paprika pulp and oil. If the bulgur sticks, simply mix in the extra bulgur and let it steep again (don`t worry, it will work).
  4. If everything fits, mix the bulgur with the vegetables and leaf parsley and season with a little salt and chilli.
