Bulgur with vegetables and mushrooms is a bright and appetizing dish that the family will love. Juicy vegetables, ruddy mushrooms, and such healthy crumbly bulgur – the dish perfectly saturates and pleases with its taste.

Ingredients
Bulgur – 180 g
Champignons – 150 g
Bulgarian pepper – 120 g
Onions – 150 g
Carrots – 120 g
Garlic – 10 g (3-4 cloves)
Fresh parsley – 3-5 branches
Salt to taste
Ground black pepper – to taste
Vegetable oil – 30 ml (2 tablespoons)
Butter – 20-30 g
Directions
Put butter in a saucepan and melt over low heat.
Pour bulgur into melted butter and fry for 1-2 minutes, stirring occasionally. You will smell the characteristic nutty aroma.
Then carefully pour bulgur with 360 ml of boiling water and simmer under a lid for 20-25 minutes.
We wash the champignons and cut them in half. If the mushrooms are large, cut into four pieces.
Heat 1 tablespoon in a frying pan. a spoonful of vegetable oil. We spread the mushrooms and fry until lightly browned about 7-10 minutes. We transfer the mushrooms to another dish.
Peel the onion and cut it into small cubes.
Peel the carrots and cut them into small cubes.
We also remove the seeds from the bell pepper and cut them into cubes.
Heat the remaining vegetable oil in a frying pan. Fry all the chopped vegetables until soft, stirring so that they do not burn, about 5-7 minutes.
Grind the parsley. Peel the garlic and chop finely.
Put boiled bulgur and fried mushrooms in a pan with vegetables. Add parsley and garlic, salt, and pepper.
Mix and heat everything together for 1 minute. Turn off the heating. Bulgur with vegetables and mushrooms is ready.
