Burrito with Beef and Bean

Burrito with Beef and Bean Instructions

  1. Cut beef, Bulgarian pepper, and tomatoes into 1 cm cubes. Finely chop onions. Heat vegetable oil in a frying pan over high heat. Add beef and onions, cook for 5-7 minutes, stirring occasionally.
  2. Add tomato paste, ground zira, and ground coriander. Stir and cook for 1-2 minutes. Pour in enough water to cover everything and bring to a boil. Reduce heat to medium-low and simmer for about 1 hour until the beef is tender.
  3. If water evaporates during cooking, add more water so the beef doesn't dry out. Add the chopped tomatoes, Bulgarian pepper, drained canned red beans, and cilantro.
  4. Add salt to taste and stir. Remove from heat and let cool slightly. While the beef cools, make the sauce: finely chop cilantro, chili pepper, and green onions. Mix with sour cream and salt to taste.
  5. Cut red onion into strips and mix with lettuce leaves. Warm each tortilla in a dry skillet over medium heat for about 30 seconds per side. For each tortilla, spread 2 tablespoons of meat filling, add some red onion and lettuce mixture, and wrap up.
  6. Heat a skillet over medium-high heat without oil. Cook the wrapped burritos for 2-3 minutes per side until lightly browned. Serve hot with the lettuce and red onion mixture and sauce on the side.
