Burrito with Chicken and Pineapple

Ingredients

  • 2 skinless and boneless chicken breasts
  • 2 teaspoon thyme
  • 2 teaspoon oregano
  • 2 teaspoon vegetable oil
  • 100 g mozzarella
  • 250 g canned pineapple
  • 100 g ham or sausages
  • 0.5 bell pepper
  • 1 jalapeno or chili
  • 3-4 tortillas
  • 4 tablespoons tomato pizza sauce
  • salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, oregano, and half the thyme. Heat the 2 teaspoons vegetable oil in a skillet over medium-high heat. Fry the chicken for 6-8 minutes per side until cooked through to an internal temperature of 74°C / 165°F. Transfer to a plate and let cool, then cut into slices.
  2. Grate the mozzarella on a coarse grater. Chop the ham, canned pineapple, jalapeno, and bell pepper into small pieces.
  3. Spread roughly 1 tablespoon tomato pizza sauce on each tortilla. Layer with a portion of the grated mozzarella, sliced chicken, pineapple, bell pepper, jalapeno, and ham. Sprinkle with the remaining thyme, then roll up each tortilla tightly.
  4. Heat a skillet or griddle over medium-high heat. Cook each burrito for 2 minutes on each side until lightly browned.
