Ingredients

  • 2 piece (s) paprika sausage (chorizos, Spanish, hot!), 4 burritos
  • 4 potato (s), finely diced
  • 1 can beans, (Refried Beans, boiled, pureed)
  • 4 egg (s)
  • 1 onion (s)
  • 1 bell pepper (s)
  • salt and pepper
  • 1 dash Tabasco
  • nutmeg

Instructions

  1. Wrap the burritos in aluminum foil and warm them up in the oven. Potatoes Dice onions and peppers and fry in a pan. Dice the chorizo or press it out of the skin (depending on which one you get) and add to the pan, let it cook.
  2. Fry the beans in an extra pan until they are warm. Beat the eggs and season with salt, pepper and a little nutmeg. Put the eggs in the sausage and vegetable pan, stir everything through and let it set.
  3. Take the burritos out of the oven, put 1/4 of the beans in the middle and 1/4 of the egg mixture, then roll into the burrito (fold in half, pull back to the middle, fold in the bottom a bit and then roll up.) If you like it spicy , can sprinkle Tabasco on it before rolling it up.
  4. It is eaten for breakfast in Mexico and the United States, but I also like to have it as a quick lunch.
