Ingredients

  • 6 leaves red cabbage
  • 200 g minced pork
  • 50 g bacon (smoked pork belly)
  • 1 onion (s)
  • 1 tablespoon breadcrumbs
  • Ground cinnamon
  • Clove (s), ground
  • salt
  • 1 cup wine, red
  • 1 cup cream
  • 6 juniper berries
  • Jelly (currant jelly) or cumberland sauce
  • 50 g mushrooms

Instructions

  1. Cook large cabbage leaves for 10 minutes.
  2. For abundance; Cut the smoked pork belly into fine cubes, finely chop the onion and mix with the minced pork, breadcrumbs and spices. Spread on the cabbage leaves and roll up. Pin in place with a toothpick. Turn the roulades in flour and fry on all sides in the hot fat. Pour on red wine and season with juniper berries. Pour in the cumberland sauce and cream and simmer for 30 minutes. Add a handful of mushrooms and finish cooking.
  3. A mashed potato goes well with it. If you want to refine it, you can add glazed chestnuts.
