Cake Appetizer with Liver Pate and Cottage Cheese

A cake appetizer in this recipe is an original appetizer based on liver pate with rice which is very easy to cook. This cake appetizer with liver, rice, and cottage cheese is large and filling, it will be a decoration for any holiday table.

Ingredients

For the liver pate:

  • Chicken livers – 400 g
  • Rice – 80 g
  • Butter – 50 g
  • Nutmeg – 1/2 teaspoon.
  • Salt – to taste

For the omelette pancakes:

  • Eggs – 4 pcs.
  • Sour cream – 4 tablespoon.
  • Wheat flour – 30 g (2 tablespoon.)
  • Baking soda – 1 pinch
  • Salt – to taste
  • Oil – to grease a frying pan

For the cottage cheese layer:

  • Cottage cheese – 250 g
  • Onions – 1 pc.
  • Carrots – 1 pc.
  • Garlic – 1 clove
  • Lemons (juice) – 1 tablespoon.
  • Salt – to taste
  • Pepper – to taste
  • Oil – to fry onions and carrots

For decoration (if desired):

  • Sour cream
  • Scallions

Directions

  1. Wash the livers, cut off the membrane and veins.
  2. Rinse the rice thoroughly and pour cold water (1 liter) into a pot.
  3. Add the livers to the pot with the rice. Cook the rice and livers for 10 minutes after boiling (until done).
  4. Place the cooked liver and rice into a blender and add 1 ladle of the liquid in which they were boiled. Blend them thoroughly into a homogeneous mass.
  5. Add salt, nutmeg, and butter. Blend again.
  6. Beat the eggs in a bowl to cook the pancakes. Add salt.
  7. Add sour cream to the eggs and whip it with a whisk.
  8. Add flour and baking soda. Mix everything.
  9. Grease a frying pan (18 cm in diameter) with the vegetable oil. Pour 1.5 ladlefuls of the egg mixture into the heated frying pan, cover it with a lid, and fry a pancake slowly.
  10. You should get three pancakes.
  11. Chop the onion.
  12. Grate the carrots on a coarse grater.
  13. Fry the onion and carrot in another frying pan in the vegetable oil for 5-7 minutes.
  14. Squeeze the garlic through a press.
  15. Add the onion and carrot mixture, garlic, salt, pepper to the cottage cheese, as well as squeeze out the juice of the lemon. Mix everything.
  16. Make the cake. You will need a cooking ring (18 cm in diameter). If you don’t have a ring, you can make a mold out of heavy foil or cut out the bottom from a disposable baking mold.
    Place the omelet pancake into the mold.
  17. Put a third of the filling of cottage cheese on top.
  18. The next layer will be a third of the liver pate.
  19. Repeat the layers two more times in this sequence. Cover the cake appetizer with liver pate and cottage cheese with plastic wrap and put it into the fridge for 10-12 hours.
  20. Coat the cooked cake with sour cream and sprinkle it with the chopped scallions.
